Make the Best Indian Vegetable Pulao Recipe

One pot meal lover's.... this one's for you guys.

Vegetable Pulao is one of the simplest rice recipes cooked in a single pot. It is quick, frangrant and easy to make.

Veg Pulao

Prep Time- 15 mins

Serving- 2

Cooking Time: 20mins

INGREDIENTS

  • 3/4th cup Basmati Rice

  • ½ tsp Cumin Seeds/Jeera. 4-5 curry leaves(kadipatta)

  • 3 tbsp Oil/Ghee

  • 1 Onion + 1 Tomato (medium to large)

  • 1 tsp Ginger+Garlic Paste

  • ¼ tsp Turmeric Powder/Haldi

  • ½ tsp Red Chili Powder/Lal Mirch Powder

  • 1 tsp Coriander Powder/Dhania Powder

  • 1 pinch Asafoetida/Hing1

  • 1/2 cups Mixed Veggies (Chopped - You can use a mix of capsicum,potatoes, peas and carrots, cauliflower)

  • 2 tbsp Coriander Leaves/Dhania Patta (chopped).

INSTRUCTIONS

  1. Rinse 1.5 cups basmati rice in water

  2. Heat oil or ghee in a pressure cooker and cumin seeds and Curry leaves/Kadipatta. Sautes till they splutter.

  3. Add chopped onions. Stir and saute till the onions start to become golden. Stir often, so that the onions cook evenly.

  4. Now add ginger-garlic paste and saute till the raw aroma of it goes away.

  5. Add 2 tbsp chopped coriander leaves.Then add the chopped tomatoes

  6. Next add the spice powders - ¼ tsp turmeric powder, ½ tsp red chilli powder, and a pinch of hing/asafoetida. Saute this spicy mixture till the tomatoes soften and become mushy.

  7. Now add 1 1/2 cups chopped mixed veggies to the spicy mixture and saute for a minute. Let the veggies blend well with the masala.

  8. Now add the drained rice. stir gently and saute the rice for a minute.

  9. Add 2.5 cups water. Season with salt and stir again. Check the taste and the stock/broth should feel a bit salty. Cover the pressure cooker with its lid and pressure cook on medium to high flame. Here time to cook rice will depend upon the capacity of your cooker. My cooker is of 3 litre capacity and it takes 3-4 whistles to cook pulav.

  10. Serve
