Quick Egg Curry Recipe

Delicious spicy preparation of egg curry

Bachelors kitchen Egg curry

Ingredients

  • 4 Whole Eggs , hard boiled

  • 2 medium Tomatoes , cooked and pureed (blend the cooked tomatoes in mixture)

  • 1 tsp Turmeric powder (Haldi)

  • 1 tsp Garam masala powder

  • 1/2 tsp Red chilli powder

  • 1/2 tsp Sugar (optional)

  • Salt , to taste

  • 1 Onion , roughly chopped

  • 1 tsp ginger garlic paste

  • Coriander leaves (Dhania) , few leaves, finely chopped

  • Cooking oil , for cooking

Instructions:

  1. Heat 2 tbsp of oil; add in the onion & garlic and ginger paste. Sauté for a few minutes until the raw smell goes away and the onion changes color to golden.

  2. Once the onion is well roasted, add in the turmeric powder, sugar, garam masala powder, and red chilli powder. Stir those powders into the onion masala until well combined.

  3. Now add in the tomato puree, salt and the eggs. Simmer the Egg Curry covered for 10 to 15 minutes until you see the eggs are coated well with the curry.

  4. Check the salt and spice levels and the consistency of the curry. Adjust them to taste and add water if you want the the curry to be thinner. Once done, garnish coriander leaves and serve.
